So, the other day I was just jonesin’ for some good old-fashioned comfort food. You know, that feeling where nothing else will do but a specific dish? Yeah, that was me.

I started by raiding the fridge. Nothing. Pantry? Nope. I was seriously craving mac and cheese, the kind with the super creamy, cheesy sauce. Not the boxed stuff, the real deal. I even thought about ordering in, but I’m trying to save money, and honestly, homemade is almost always better.

Operation: Mac & Cheese

First I grabbed my cook book for my family’s best mac & Cheese recipe. I love this recipe my mother gave me.

Then, I dug around for the ingredients. I found some pasta, some different cheeses, and then realized…no milk. Seriously? How can you make mac and cheese without milk?!

I briefly considered giving up. Briefly. But the craving was too strong. So, I Got dressed, went out of the house, drove to the nearest grocery store.

Got back, and finally, I could start cooking. Boiled the pasta, made a roux (butter and flour, the base of the sauce, in case you’re not a kitchen whiz), whisked in the milk (thank goodness for small victories!), and slowly added the cheese. Cheddar, a bit of Monterey Jack, and a touch of something sharp, like Gruyere.

It took a while, stirring and melting and making sure the sauce didn’t stick. But let me tell you, the smell alone was worth it. That cheesy, buttery aroma filled the whole kitchen.

Finally, it was done. I mixed the cooked pasta with the glorious sauce, poured the whole thing into a baking dish, and topped it with more cheese (because why not?) and some breadcrumbs for a little crunch.

Into the oven it went, just long enough to get bubbly and golden brown on top.

The result? Pure, unadulterated cheesy goodness. It was exactly what I was craving, and even better because I made it myself, from scratch. It was a bit of a process, but sometimes, that’s part of the fun. Satisfying that “just jonesin’” feeling? Priceless.
